So…. I’ve been slacking on my
blog posts. Between summer activities with the kids, work, and family vacations it’s been tough to get
something down. I have a new summer time salad that so easy and so goooood I
had to make time to get this out to you! You’ll only need 4 main ingredients
and 5 minutes. My son who hates kale and
avocado actually loves this salad! Here it is:
What you need:
1 bunch of green kale
1 avocado
1 lime
¼ cup pepita seeds
Salt to taste
1st grab a big mixing bowl.
Next tear kale leaves into bit-sized pieces and place in bowl. Discard the
stems.
2nd Sprinkle salt
over the kale and scrunch/massage the kale with your hands until it reduces in
size. (When you start the kale will be fluffy and after adding salt and
massaging the kale will break down and turn a darker green color.)
3rd Slice open
your avocado removing the pit and while still in the skin make small slits
lengthwise into the meaty part of the avocado. Then with spoon hollow out the
meaty part on top of the kale. Now cut your lime in half and juice only ½ the
lime over the kale and avocado.
4th Massage kale
while mashing the avocado into the kale. I do this all with my hands but you
can do this with a fork. Taste the kale
after it’s coated with the avocado. Add more lime juice and salt if you want to. I like things limey so I use the whole lime.
5th Sprinkle
pepitas over the top and lightly toss.
For people who have a tough
time eating kale I do believe that this salad will help. I took this salad to a
dinner party and it was a big hit! I apologize that I don't have a picture of the finished product but everyone ate it before a had a chance to take one :)
